Indulge in the ultimate breakfast treat with this delightful Blueberry Pancake recipe, a perfect blend of fluffy texture and the sweet burst of blueberries in every bite.
Method
STEP 1
Prepare the Pancake Batter: Follow the instructions on your pancake mix package to prepare the homemade batter. If you’re using a homemade recipe, mix together your dry ingredients and wet ingredients as per the recipe.
STEP 2
Gently fold the blueberries into the batter. If using frozen blueberries, there’s no need to thaw them. Pour the pancake mix into a large bowl, and then add the rest of the ingredients; gently fold in the blueberries. Let the batter rest for 5-7 minutes.
STEP 3
Preheat the Air Fryer: Preheat your air fryer to 350 degrees F (175°C) and preheat for 3-5 minutes. This helps in cooking the pancakes evenly.
STEP 4
Prepare the Air Fryer Pan: Lightly grease a 6-inch cake pan with non-stick cooking spray or oil brush to prevent the pancakes from sticking.
STEP 5
Cooking the Pancakes: Spoon the batter into the prepared, forming small circles. Place the pan into the air fryer basket.
STEP 6
Cooking time: Set cook time for 7-8 minutes, carefully flip each pancake halfway during the cooking process by using a spatula, and cook until both sides are golden brown and cooked. You can usually tell that the air fry pancakes are starting to get done when you notice the crispy edges.
STEP 7
Check they are done: The pancakes should be fluffy and lightly browned on both sides. The cooking time might vary slightly based on the air fryer model.
STEP 8
Serving: Serve the golden pancakes hot with toppings, such as maple syrup, honey, butter, or extra fresh blueberries.
